I know many of you are out and about celebrating, but I still wanted to post a little red and blue cookie recipe today to keep the patriotic theme going. I know I know, you guys already have your memorial day eats planned, but just think, these gluten free strawberry blueberry oatmeal breakfast cookie are a great travel snack and/or a healthy breakfast to make for any kind of patriotic holiday. Ahem… Like Fourth of July.
I mean, who doesn’t love a good berry flavored oatmeal cookie anyway? Especially one that’s made with fresh berries, super easy, and best of all …. TOTALLY allowed to be eaten at breakfast!
Speaking of breakfast, these breakfast cookies haves actually been our go to for breakfast over the past month. You see, I made these a while back and froze a bunch. Then all I had to do was just reheat a little in the microwave or toaster oven. The smell alone is delightful.
Now combine that with all that fresh natural sweetness of the berries and it’s like an explosion of breakfast meets dessert in one. OK I might be exaggerating a bit. But you get what I mean. Plus I’m about bringing these “treats” to all our holiday family functions. My nieces and nephews are obsessed with FRUIT so I know they will LOVE the blueberry strawberry in a breakfast cookie form. Just say the word cookie and they are sold. I get cool Aunt bonus points, right?
But regardless of my cool factor, the other reason I absolutely ADORE these festive breakfast cookies are because the combination of gluten free oats and vitamin C rich fruits (like berries) actually help increase your chromium absorption.
I know what you’re thinking. .. uh.. chromium? Why do we need this mineral again? Okay I’ll tell you!
Chromium is a trace minerals that the body needs to support the growth, development and other various physiological systems. It’s also needed for proper glucose absorption from the blood. When your levels of chromium are too low, blood sugars may rise, which can cause that HANGRY sensation and definitely not good for the those adrenals glands. We can’t stress over that, right? Which is why Chromium is so important, especially at BREAKFAST. Chromium rich foods include broccoli, Brewer’s yeast, nuts and oatmeal!!! YEA! So you see my whole plan here right?
Berries –> Vitamin C + Oatmeal –> Chromium = AMAZING NOURISHING BREAKFAST COOKIE and just plain delicious.
See, gluten free cookies can actually be a health food. A health food that taste like a REAL cookie though. Ya know?
Okay, so all you need to make these gluten free oatmeal breakfast cookies are fresh berries, a little coconut sugar, gluten free oats, a few handfuls of nuts or pumpkin seeds, eggs, and gluten free pancake mix or gluten free multi-purpose flour, and ONE BOWL –> BAM!
The cool thing about using gluten free pancake mix in this recipe is that you can make the batch egg free. I suggest using a mix with protein already it or a gluten free pancake/muffin mix that doesn’t require you using eggs in the original cooking instruction. No egg is needed but it does help create texture and volume.

Ingredients
- 3 cups gluten free quick oats- flavored or plain
- 1 cup blueberries
- 1/2 c 1 tbsp gluten free pancake mix or gluten free mutli purpose flour
- 3/4 cup almond milk (or coconut milk)
- 1 egg (see notes for egg free or vegan version)
- 1/2 cup coconut sugar- or more if you'd like sweeter
- 1 tsp baking powder
- 1 tsp Vanilla
- 1/4 tsp salt
- 2-3 large strawberries sliced (for that red patriotic color)
- 1 -2 tbsp chopped nuts or pumpkin seeds (optional)
Instructions
- Preheat oven to 350F. Grease a baking sheet. Set aside.
- In a large bowl, combine all your ingredients, fold in your strawberry slices last
- Use a cookie scooper and place on baking tray 1 inch apart.
- These cookies will be more like cluster and won't spread much.
- Bake for 22-25 minutes or until golden brown on bottom.
- Remove and cool for 5 minutes.
- Store in air tight container or freezer for later.
Notes
If you use a gluten free pancake mix then you can omit the egg and make them vegan friendly. they will be denser but still work. Or feel free to use a chia egg or 1 -2 tbsp coconut oil. Cooking times will vary so check after 15 minutes.
For more protein added with or without an egg, we use flapjacked protein pancake mix.
